Yummy Coffee: Cappuccino Pancakes with Coffee Syrup

Coffee is one of the most, if not the most popular drinks in the world, with over 400 billion cups consumed each year. More than 450 million cups of Java are consumed in the United States alone.

 It’s understandable—even relatable, really. Coffee is a huge part of being an adult. It helps us accomplish and keep up with our adult duties and responsibilities. If you love coffee, caffeine, and Sunday brunches, these fluffy Cappuccino Pancakes with Mocha Syrup are destined for you. This recipe is a spruced-up version of the traditional pancake recipes with a good amount of espresso powder to give it a smooth and well-rounded coffee flavor. Then, like any proper cappuccino, these pancakes are topped with whipped cream and homemade mocha syrup.

These cappuccino pancakes are delicious and delectable just on its own with an intense coffee flavor, but once you drizzle that mocha syrup, it becomes the best breakfast ever. Or the best afternoon snack. It actually doesn’t matter because you’ll want it any time of the day. And we doubt if you could wait ‘til breakfast for it. Nevertheless, you’ll never want maple syrup on your pancakes ever again. Serve these with your freshly-brewed or dripped coffee from your Nespresso capsules, hot or iced, and you’ll start your day off just right. 

Fluffy Cappuccino Pancakes with Mocha Syrup

Makes 4-6 servings, or just two if you are in for a hectic day

Cappuccino Pancakes

1 1/2 cups all-purpose flour

1 tbsp baking powder

1 tbsp espresso powder (or finely ground coffee)

2 tbsps granulated sugar

1/2 tsp salt

1 egg

1 cup milk

2 tbsps melted butter

In a large bowl, whisk together flour, espresso powder, baking powder, sugar, and salt. Add the egg, melted butter, and milk. Mix together until well-incorporated (a few lumps are fine).

Pour 1/4 cup of the pancake batter onto a heated pan or griddle and cook each side until lightly browned. Serve hot with whipped cream and mocha syrup (see recipe below).

Mocha Syrup

1/2 cup brewed coffee from Nespresso pods or capsules

1/4 cup  dark or regular cocoa powder

1/4 cup caster sugar

1/4 tsp salt

1 tsp vanilla extract

In a small saucepan, mix together coffee, sugar, cocoa powder, and salt and simmer over medium-low heat. Constantly stir until syrup begins to reduce and thicken. Turn off the heat and stir in vanilla extract. This syrup may be served warm or chilled in the fridge for other yummy purposes, like topping your favorite ice cream.
